- 1 package cream cheese
- 1/2 Cup Sharp Cheddar Cheese
- 1 Whole Egg
- 1 Package Bacon
- 1 Package Ground Chicken
- 1 Package Ground Meat (50/50 Beef/Pork)
- 2 Packages Ground Meat (50/50 Beef/Pork)
- 1/2 cup Black Buffalo Marinade Sauce For meat mix
- 1/4 cup Black Buffalo Marinade Sauce For cream cheese
- 1/2 cup Black Buffalo BBQ Sauce For basting
Instructions
- Prepare the Bacon Blanket: Lay strips of bacon on a sheet of parchment paper or foil, overlapping slightly to form a "blanket." Set aside.
- Make the Meat Mixture: In a large bowl, combine the ground chicken, ground beef/pork mix, 1 egg, and 1/2 cup of Black Buffalo Marinade Sauce.Mix well until evenly combined. Shape the mixture into a loaf and set it aside.
- Prepare the Cream Cheese Filling: In another bowl, use a hand mixer to blend the cream cheese, 1/4 cup Black Buffalo Marinade Sauce, and 1/2 cup shredded sharp cheddar until smooth.
- Assemble the Meatloaf: Flatten the meat mixture slightly to form a rectangle.Spoon the cream cheese mixture into the center of the meatloaf, leaving room around the edges.Fold the edges of the meat mixture over the filling, shaping it back into a loaf to encase the cream cheese.
- Wrap the Meatloaf in Bacon: Carefully place the loaf onto the bacon blanket.Wrap the bacon around the loaf, tucking the ends underneath to secure.
- Bake the Meatloaf: Preheat the oven to 325°F (160°C).Place the bacon-wrapped meatloaf in a baking pan or dish. Bake for 1 hour, or until the internal temperature reaches 160°F (71°C).
- Add the BBQ Glaze: Remove the meatloaf from the oven and brush it generously with 1/2 cup of Black Buffalo BBQ Sauce.Return to the oven for an additional 10-15 minutes, or until the bacon is crispy and the glaze is caramelized.
