- Marinate the Tofu: In a bowl, combine the cubed tofu, 1/4 cup Black Buffalo Marinade, 3 tablespoons white wine vinegar, and a pinch of salt.Mix gently to coat the tofu evenly.Cover and refrigerate for 4 hours or more.
- Bake the Tofu: Preheat the oven to 425°F (220°C).Spread the marinated tofu cubes onto a baking sheet lined with parchment paper or lightly greased.Bake for 40 minutes, flipping halfway through, until golden and slightly crispy.
- Assemble the Meal: Divide the baked tofu into meal prep containers.Add steamed broccoli and your cooked grain of choice (buckwheat, rice, or quinoa).Garnish with chopped green onions.
