Ingredients
- 2 cups Dry Quinoa Rinsed and cooked
- 1 can White Beans Drained and rinsed
- As Needed Spinach Fresh
- As Needed Red Cabbage Chopped
- As Needed Cherry Tomatoes
- 1 Shallot Minced
- 1/4 Cup Black Buffalo BBQ Sauce
- 1/4 Cup Tahini
- 1 Tbsp Ground Ginger
- 1 Tbsp Garlic Powder
- 1/2 Cup Water To thin the dressing as needed
Instructions
- Cook the Quinoa: Rinse the quinoa thoroughly and cook according to package instructions (usually 2 cups of water for 1 cup of quinoa). Once cooked, set aside to cool.
- Prepare the Vegetables: Chop the red cabbage, cherry tomatoes, and spinach (if needed).Mince the shallot.Drain and rinse the white beans.
- Make the Tahini BBQ Dressing: In a small mixing bowl, combine: 1/4 cup Black Buffalo BBQ Sauce1/4 cup tahini1 tablespoon ground ginger1 tablespoon garlic powder1/2 cup water (add gradually to achieve desired consistency).Mix until smooth and creamy
- Assemble the Buddha Bowls: Divide the cooked quinoa into four serving bowls.Top each bowl with equal portions of spinach, red cabbage, cherry tomatoes, white beans, and minced shallot. Add cilantro if desired.
